::Breakfast Eats::

*conversation from yesterday*
Me: okay Luke, time to head onto bed. Tomorrow's another day gotta get your rest.
Luke: why mommy?
*points to the window*
Me: see that? That's the moon. Mr. Sun went to bed and the moon came out which means you have to go to sleep. And we're going to have a lot to do tomorrow.
Luke: *sighs* okay. But I have to tell you something first mommy
Me: And what's that love?
Luke: I don't like the moon.
Me: I know. It's okay. sweet dreams babes
Luke: I love you mommy.

As a kid I never really liked to sleep either. I hated my afternoon naps and always envied my parents because they always had something to do. I always had that mentality that if I closed my eyes for 2 seconds something was going to happen and I was going to miss out on it. And as I got older I took one every chance I got.  Now, my own kids take after my traits just 21 years ago. Funny how life can repeat itself sometimes.
So breakfast today consisted of Aidells Chicken & Apple Sausages & scrambled eggs.
Another easy, simple thing to whip up in the mornings. First time I saw this was at the demo tables at Costcos. It's got a tad bit of sweetness to it because of the apple, but it blends in purfectly with the scrambled eggs. My batteries were charging this morning and I apologize for not taking any pictures. So I'll go with the step-by-step I did with my breakfast creation.

You'll Need:
1. 2-3 eggs (depending of how empty your stomach is)
2. 1 pack of Aidells Chicken & Apple flavored sausages**
3. 1/2 - 1 cup of milk
4. 1-2 tablespoons of Lawry's seasoned salt
5. 1/2 - 1 tablespoon of vegetable oil.

**I openly admit that I'm a huge Costco whore. The Aidells sausages they sell there is what you see on the image above. Which is 2-8 packs for roughly $13 here in Fresno, CA. We also have a FE or Fresh & Easy Supermarket around the corner which is like the cheaper version of Whole Foods where they sell the sausages in small packs of 4 for about $4.99. Which brings me to the conclusion that Costco is about 10xx cheaper. Anything that I buy from Costcos can literally feed my family for a month. So whatever I get from there, I'd usually divide into porportional ziploc/freezer bags when I get home.

1. In a mixing bowl, beat & whip the eggs for about a good 2-3 mins while having the stove on a low/med setting & a saucepan with the vegetable oil.
2 While the pan is heating up, combine the milk & the seasoned salt into the mixing bowl with the eggs.
3. Eggs go into the saucepan & while chopping up the sausages.
4. Remember to cook the sausages separately or else scrambled egg sausages isn't going to look pretty.

I usually top it off with fresh cooked white rice on the side but that's just my preference. Flapjacks & hash browns are sometimes too much work especially during the mornings when everyone is starving and antsy for food.

Anyways, I hope everyone has an awesome weekend!! I can't imagine a better way of celebrating my 4th than spending time with my kids and the love of my life who sacrifices his life fighting for my freedom as well as everybody elses. Thank you dear husband & ALL the men, women, sons, daughters for EVERYTHING you do for this country. Happy 4th everyone!! :)

::You say Ketchup I say Catsup::

Happy Memorial Day everyone!! I know it's been awhile since I did my first post. Time has been flying by so freaking quick that I haven't gotten the chance to jump on. Life has seriously been quite hectic for me & balancing 2 crazy kiddys doing this mom stuff for hubby's unit.
But enough of that, if I wanted to rant about my life, I'd be blogging on my other page. So I was walking around Costco a few weekends back, and they always have these insane demo tables and whatnot.

okay, that's probably as good and as close I could get them both together. These were on the demo table. I absolutely LOVED it. The one thing I've always liked about Costco is how everything comes in BULK. Yes I might have somewhat of a small/big family (3 kids including hubby & 2 insane and very hyper small dogs), but it's awesome how much I save by purchasing in BULK, and separate everything into little Ziploc bags and use them in portions few times a week. Now with this, cut the bag of tortellini in half since it only took half to feed the 3 of us plus leftovers at the end of the night!! Broil the water over medium heat until it starts getting super hot, cook the pasta for additional 15-20 minutes, DRAIN water, pour a desirable amount of pesto sauce and slightly heat up for about 5-10 mins, and viola!! Dinner is served.
It is something I HIGHLY recommend with a glass of wine of one's choice. Dessert should follow with a pretty bowl of fresh strawberries or my favorite, cherries.

"Fresh and dried cherries are one of the only natural food sources of melatonin, the chemical that controls the body's internal clock to regulate sleep. recommend eating them an hour before bedtime or before a trip when you want to sleep on the plane." - Health expert on MSN.

Isn't it simply gorgeous outside? I don't think I'm going to let my day slip by. I should probably go out and enjoy whatever is left with my awesome family. Hope everyone else is enjoying their weekend!! =)

::Huggies & Pampers::

I created a new blog!! I've grown to a liking to this website, it lets you connect or link your blogs together which makes things much easier and in an organized way.
First and foremost though, a BIG thank you to my girlfriend VickyAnn for inspiring me to create this blog. Like I said, I was once standing in your shoes, same size and all. My parents were never home. I lived on frozen $0.99 entrees that you would find in your local freezer aisle (if we walked around any grocery store, i could you off the bat what would every frozen dinner tastes like because that's how bad it got) literally for lunch and sometimes for dinner for about 4 years straight. Marrying a guy who knows how to cook but was spoiled by his own traditional old-fashioned mother didn't help. Imagine how many brownie points I must've gotten when I almost burnt down the kitchen right?
Growing up, growing out of things while trying to raise your own family is a real eye-opener. You look up endless receipes wondering if they'll like it or try to sneak it into the trashcan when your back is turned. Or in my case, feed it to the dogs. Which brings me to how much I love my MARINADES. Trust me when I say that they're a REAL lifesaver.  For whatever magical reason, they have this way of making my kids tastebuds dance - so much that most of the plate is cleaned by the end of dinner.
Anyways, enough babbling here. Thank you for this awesome idea to start this up. One day, I'll look back on this and hopefully pass it down to my kids and not send them to the freezer aisle.
